Whenever, I made them, I used to get lovely hugs (pre-covid 19). Bhajia can be eaten as a snack at any time of the day.

A choice of wok is very important as it can be a big contributing factor to the outcome of the dish. Always use a heavy base wok.

Preparation time 30 – 45 minutes and cooking 30 – 45 minutes

Ingredients

  • 450 g  Finely milled gram flour -Besan 
  • 300 ml Water
  • 3 medium size potatoes peeled and sliced into small dices
  • oil for deep frying
  • 1 tsp salt
  • 2 medium onions sliced
  • a bunch of spring onions
  • 1 tsp chills
  • 1 tsp fresh ginger grated or powder
  • coriander chopped
  • 1 tbs all purpose seasoning
  • 1½ tsp Easy blend dried yeast

Instructions

  1. Boil the chopped small pieces of potatoes, after 10 minutes add chopped onions, spring onions leave for another 5 minutes.
  2. Leave the boiled mixture to cool for about five minutes.
  3. Sieve the gram flour into a big mixing bowl, then add all the remaining dry ingredients
  4. Gradually add the boiled mixture, mixing thoroughly careful not mashing the potatoes, until thick batter formed and the onions and potatoes well coated
  5. Leave the batter for 15 – 20 minutes to allow the batter to rise a bit and the spices to mix well
  6. Heat the oil in heavy base wok or deep pan over a medium heat. To check if the oil is hot scoop a little batter with tea spoon drop into the oil, will rise immediately to surface without turning brown.
  7. Scoop some batter using a table spoon drop into the oil, ensuring you don’t over fill the spoon making them too large as they won’t cook inside. Fry a few at time turning them so that they don’t burnt on one side and they’re evenly cooked until they’re golden brown.
  8. Remove the cooked bhajias, put on a large kitchen tissue to drain the access oil.
  9. Repeat the process until all the batter is finished.

NB: I like to use dried fast yeast instead of bicarbonate because it makes them moist inside, while with bicarbonate they come out a bit dry.
